Bread and Butter Part 1 : How to Bake your own loaf of Bread at home with a domestic oven. I've teamed up with Kenwood to create the ultimate Bread and Butter Experience. (link) Part 2 : How to make BUTTER : https://www.youtube.com/watch?v=5jSsDUNAjIM Ingredients you need : Flour, Water, Yeast, Salt and a Dutch Oven. Yes a dutch oven. It's the perfect way to bake your bread at home. Also, No need for sugar, modern yeast are powerful enough. No need for oil either. Instructions : 40 grams of fresh yeast, in 600 ml of tepid mineral water, or 15grams dry yeast. In the bowl of the mixer drop 18g of salt. Then add a kilo of bread flour and start slowly mixing. Add the water and the yeast. As soon as everything is properly incorporated, set the speed to minimum, and knead the dough for 10 minutes. First proofing : Place the dough in an airtight container and let it proof in a warm and dark place for 1 - 2 hours. Then, Press down the dough, shape as seen in the video. Second proofing : Place the dough in an airtight container and let it proof in a warm and dark place for 30 minutes to 1 hour. Meanwhile, Heat dutch oven to 250°C or 480°F. Out of 2nd proofing, Sprinkle the dough ball with flour. Now using razor's blade, score the surface a few times. Squeeze on oven proof gloves, get the dutch oven out, place the dough ball inside. Back in the oven. I bake my bread at 250°C for 30 minutes, then at 230°C for another 30 minutes. Instead of kneading by hands or with a kneading machine, let the rough pizza dough rest on the side. Gluten will develop itself if you let it proof for a long time, in this case 12 to 18 hours. Measuring from this recipe : - 430g water - 200g flour (tip 00) - 1.6g fresh yeast - 430g more flour - 20g salt 1st proofing/rise : 12 to 18 hours 2nd proofing/rise : 2 hours after forming the dough balls. To make the curry paste, halve, deseed and roughly chop the chillies, then peel the garlic and ginger. 2. Put a frying pan over a medium-high heat and add the cumin and coriander seeds. Lightly toast for a few minutes, or until golden brown and smelling delicious, then remove from the heat. 3. Add the toasted spices to a pestle and mortar and grind until fine, or put them in a food processor and whiz to a powder. 4. Once you've ground them, add the toasted spices to a food processor along with the remaining paste ingredients and whiz to a smooth paste, then put to one side. 5. Slice the chicken breasts lengthways into 2cm strips. 6. On a clean chopping board, peel, halve and finely slice the onions. Peel and finely slice the ginger, then pick the coriander leaves and put to one side, finely chopping the stalks along with the chilli. 7. Place a large casserole pan over a medium-high heat and add a couple of lugs of oil. Once hot, add the onions, chilli, ginger and coriander stalks, then cook for around 10 minutes, or until softened and lightly golden. 8. Add the chicken and roughly 140g of the tikka masala paste, stirring well so everything is nicely coated. Season with salt and pepper, add the tomatoes and coconut milk (save the rest for another day), then bring everything to the boil. 9. Turn the heat down to medium-low, cover and simmer for 20 minutes, then take the lid off and cook for further 5 minutes, or until the meat is tender and the sauce has reduced, stirring occasionally. 10. Divide the curry between bowls, sprinkle over the almonds and coriander leaves. Serve with fluffy rice, a dollop of yoghurt and lemon wedges for squeezing over. Pop any leftover curry paste in a sealed jar and keep it in the fridge for up to 2 weeks -- this way you'll be able to knock up a quick curry in next to no time. Bread and Butter Part 2 : How to make Butter from Cream. Beating cream with a stand mixer is the fastest way to get homemade butter. (link) Part 1 : How to make BREAD : https://youtu.be/1r6jV-MaQuc From milk to cream, and from cream to butter and buttermilk. Beating the cream produces whipped cream first and then creamy butter. Very simple yet so rewarding. Instructions : Drop cream in a mixer, a pinch of salt and start beating at full speed. Use a splash-guard. Beat or mix or Whisk. From cream you ‘ll get whipped cream , then from whipped cream you’ll get a grainy stuff , and then finally butter and buttermilk. Set the buttermilk aside, and now rinse the butter by beating it with ice cold water. It will wash away the remaining milk in it, hence make that butter last longer. Stir it thoroughly and Squeeze out the excess of water. Video Recipe for French Toast made in France ! Fun, fast, delicious and all the details are included in the description. Mouthwatering ! Imagine that : Your kids just came back from what can be called a shitty day. But Mommy or Daddy (please dads cook ! ) can fix this up with a big shiny pile of delicious FRENCH TOAST ( Pain Perdu )... You will make their day and your evening too lol Please comment because I wanna hear from you ! And if you like it, even a little smile on a bad joke, please like it I will be glad and I will take english lessons... Ingredients --------------- - 4 thick slices of stale bread ( hard and dry ) NB : That is why it is called in France "Pain Perdu" (translation : Lost Bread) , because otherwise, you would have to trash it. - 1 egg - 1/2 cup of Milk - 2 TBSP of white sugar - 2 TBSP of brown sugar ( for the caramelization) - 1 small bag of vanilla sugar (actually I used half of it but what if you loooove vanilla ?) Chocolate is a crystallised form of cocoa butter, which is polymorph. There are 6 chocolate crystal structure total. Each with a specific melting point : 1 - 17.3°C : 63.1°F (very bad chocolate ) 2 - 23.3°c = 73.9°F 3 - 25.5°C = 77.9°F 4 - 27.3°C = 81.1°F (bad tempering most likely ;) ) 5 - 33.8°C = 92.8°F ( GREAT chocolate) 6 - 36.3°C = 97.3°F (old chocolate) TABLING is the classic technique in which you spread and stir melted chocolate on a MARBLE surface. SEEDING is tempering chocolate by adding stable cocoa butter crystals gradually to melted chocolate.
